Smashed Avocado with Caramelised Balsamic Reduction

MEDIUM PREPARATION

4 thick slices of sour dough or your choice bread toasted
2 large ripe avocados
100g feta cheese
6 cherry tomatoes sliced
Spanish onion and chopped parsley to garnish

COOKING METHOD

Scoop out the avocado flesh into a bowl and with a fork lightly smash it up. Make sure it is still lumpy.
On the top of each piece of sour dough evenly divide the avocado.
Top with the cherry tomatoes.
Transfer to serving plate and drizzle with the Willow Vale Gourmet Food Co. Caramelised Balsamic Reduction.
Crumble some feta cheese on each one.
Sprinkle with your choice of Willow Vale Gourmet Food Co. – dukkahs.
Garnish with parsley and spanish onion and serve.
