Salmon with Macadamia Dukkah Crust

4 salmon fillets with skin on

Willow Vale Gourmet Food Co. - Lemon Myrtle & Pepper Olive Oil
Pickle Hopper - Pepperberry Smoked Salt

10 MINUTE COOK TIME

COOKING METHOD

Pre-heat a fan forced oven to 220 C for medium rare salmon (fast cook for 10 to 12 minutes) or 180 C for medium well done salmon (slower cook for 15 to 18 minutes ).
Line a tray with non-stick baking paper.
On another plate gently rub some Willow Vale Gourmet Food Co. - Lemon Myrtle & Pepper Olive Oil all over the salmon.
Leave on the plate skin side up, crush and sprinkle with your fingers some Pickle Hopper - Pepperberry Smoked Salt over the skin.
Sprinkle some Willow Vale Gourmet Food Co. - Macadamia Dukkah over the skin and press down gently.
Set aside to infuse flavour and to allow to reach to room temperature. Approximately 30 minutes.
Transfer each fillet (skin up) to the lined baking tray and place in oven.
Cook according to how you like your salmon cooked with the above temperature guide.
Serve with your favourite sides.
Serving Suggestion: Mixed garden salad dressed with Willow Vale Gourmet Food Co. - Lime Balsamic Reduction, warm chat potatoes and garlic aioli.
