Prawn and Avocado Salad

MEDIUM PREPARATION

One handful of mixed leafy greens of your choice
4 thick tomato slices
1 grated carrot or carrot noodles
Half of one spanish onion - thinly sliced
6 cooked peeled and deveined prawns (keep one with tail intact for garnish)
4 thick wedges of avocado
Willow Vale Gourmet Food Co. - Poppyseed Dressing
Pickle Hopper - Pepperberry Smoked Salt

COOKING METHOD

Starting with 2 tomato slices as your base, layer up leafy greens, 3 or 4 rings of onion, grated carrot or carrot noodles, two avocado wedges and top with three prawns. Repeat until all ingredients are gone. Once you get to the desired serving size simply drizzle over Willow Vale Gourmet Food Co. - Poppyseed Dressing and season to taste with Pickle Hopper - Pepperberry Smoked Salt. Garnish with extra prawn and carrot and serve.

This salad is ideal as an entrée – or simply upsize the portions to create a main.
