Lemon Myrtle BBQ bug tails

MEDIUM PREPARATION

12 Morton Bay bug tails, cleaned and deveined
Willow Vale Gourmet Food Co. - Lemon Myrtle Olive Oil
Pickle Hopper - Salt & Pepper Smoked Salt
1 tablespoon Lemon Pepper Seasoning

COOKING METHOD

Place bug tails meat side up in a container.
Drizzle each tail with the Willow Vale Gourmet Food Co. - Lemon Myrtle Olive Oil
and rub in with your fingers.
Sprinkle the lemon pepper seasoning evenly over each tail the and rub in well.
Leave covered in the fridge to marinate for an hour.
Fire up your BBQ or your char grill plate to a medium heat.
Sprinkle Pickle Hopper - Salt & Pepper Smoked Salt over the tails and place meat side down on the BBQ char grill for 7 to 10 minutes.
Turn Bugs over and brush the meat lightly with more of the Willow Vale Gourmet Food Co. - Lemon Myrtle Olive Oil
Turn BBQ down to low, close the hood or cover with some foil and cook for another 5 min.

Serve with a crisp rocket salad and Willow Vales Lime Balsamic Reduction
