Creamy Chicken Bake with Almond, Chilli & Bilberry Dukkah

MEDIUM PREPARATION

40g butter
1 onion diced
2 tsp crushed garlic
Willow Vale Gourmet Food Co. - Extra Virgin Olive Oil
1 tbsp corn flour
1 cup of chicken stock (1 cup boiling water with 2 dissolved chicken stock cubes)
1 cup of cream
3 cups diced chicken breast
2 cups frozen mixed vegetables or any left over steamed vegetables
½ cup grated tasty cheese
¾ cup pizza blend cheese
Pickle Hopper - Salt & Pepper Smoked Salt
Willow Vale Gourmet Food Co. - Almond, Chilli & Bilberry Dukkah
¼ cup chopped parsley

COOKING METHOD

Pre-heat oven to 180 C
Grease 6 ramekins
In a non-stick pan drizzle some Willow Vale Gourmet Food Co. - Extra Virgin Olive Oil and sauté the onions on medium heat for approximately 3 minutes.
Add the garlic and sauté for 2 minutes.
Add the chicken and sauté to brown.
Add the mixed vegetables and the 1 cup of chicken stock.
Add the chopped parsley.
Combine the corn flour and the cream well and slowly add to the pan.
Season to taste with Pickle Hopper - Salt & Pepper Smoked Salt.
Stir to thicken and add the tasty cheese.
Fill the ramekins with the chicken mixture.
Sprinkle with Pizza Cheese Blend and Willow Vale Gourmet Food Co. - Almond, Chilli & Bilberry Dukkah. Bake until golden brown.
Serve with your choice of salad.
