Pre-heat fan forced oven to 180 C
Line a baking tray with non-stick paper.
In a small bowl combine pizza cheese, half of the parsley, Willow Vale Gourmet Food Co. - Pistachio & Coconut Dukkah
and the Willow Vale Gourmet Food Co. - Lime Balsamic Reduction
Open out the thigh fillet and cut the fillets in half so you end up with a slightly
fatter fillet and a smaller one.
Pound them out gently between some cling wrap to flatten and level them slightly.
Arrange them on the lined tray.
Place some of the dukkah, and cheese mix on top of the chicken and press down gently.
Bake in the oven for 10 to 15 minutes or until golden brown.
Serve with your favourite salad, drizzled with Lime Balsamic Reduction and garnish with parsley and
Pistachio and Coconut Dukkah
