Pre-heat fan forced oven to 180 C.
Line a baking tray with non-stick paper.
In a small bowl combine pizza cheese, half of the parsley and the Willow Vale Gourmet Food Co. – Almond, Chilli & Bilberry Dukkah.
Open out the thigh fillet and cut the fillets in half so you end up with a slightly fatter fillet and a smaller one.
Pound them out gently between some cling wrap to flatten and level them slightly.
Arrange them on the lined tray and place a slice of tomato on each fillet.
Place some of the dukkah and cheese mix on top of the tomato and press down gently.
Bake in the oven for 15 minutes or until golden brown.
While the chicken is cooking…
Mix in a small bowl the yoghurt and remaining parsley, divide into ramekins and top with small cubed cucumber.
When the chicken is ready serve immediately drizzled with the Chilli Olive Oil, your favourite salad and the yoghurt on the side.
This dish is a perfect entrée or add more chicken and some potato wedges for a main dish.
